Ingredients

    cups vinegar
  • cup oil
  • 1
    cups sugar
  • 1
    can black beans, rinsed & drained
  • 1
    can black-eyed peas, rinsed & drained
  • 3
    stalks celery, chopped
  • 1
    green pepper, chopped
  • 1
    red pepper, chopped
  • 1
    red onion, chopped
  • 1
    package frozen corn
  • 0
    salt, pepper

Preparation

  • Step 1.
  • Bring vinegar, oil, and sugar to a boil, dissolving sugar. Let cool.
  • Step 2.
  • Drain & rinse beans. Prepare veggies and mix with beans and corn. Pour cooled vinegar mixture over veggies.
  • Step 3.
  • Refrigerate over night. Drain beans & vegetables completely before serving.
