Vegetarian Chili

Ingredients

    sweet potato, peeled & diced
  • 1
    red pepper, diced
  • 1
    onion, diced
  • 1
    15-oz can tomato sauce
  • 1
    cup water
  • 2
    15-oz cans black beans
  • 1
    T chili powder
  • 2
    teaspoon cumin
  • 2
    teaspoon smoked paprika
  • 0
    salt & pepper
  • 0
    oil for sauteing

Preparation

  • Step 1.
  • Saute peppers, onions and sweet potatoes in oil. Salt & pepper.
  • Step 2.
  • When onions are nearly translucent add spices. Stir and cook for about a minute, until aromatic.
  • Step 3.
  • Add tomato sauce and water. Simmer until potatoes are done.
  • Step 4.
  • Rinse beans, add and heat through.
