Fisherman's Chowder
Ingredients

oz pancetta or bacon
2
stalks celery, diced
1
small onion, diced
4
medium-large potatoes, diced

15-oz can chicken stock
⅔
package cream cheese, scant 6 oz
⅔
cup milk
2
cod fillets, cut into bite sizes

Preparation
Step 1.
Cook pancetta or diced bacon until starting to crisp, remove from pan.
Step 2.
If needed add oil to bacon grease. Saute onion and celery. Salt & pepper.
Step 3.
After about 5 minutes add potatoes. Salt & pepper.
Step 4.
Let potatoes start to cook, then add stock. Cover and simmer until potatoes are done, about 8 minutes.
Step 5.
When potatoes are tender, add cream cheese, cook until melted.
Step 6.
Add milk, bacon and finally cod. Cook 3 or 4 minutes more until cod flakes. Adjust seasonings.
